Apple Pie

We're back and a little embarrassed that an entire month has passed with out any new blog posts. Don't worry, you didn't miss much. We've been up to the same old, same old: running, studying, & work.

This past weekend Joel had a fun, cold & rainy weekend camping with our students. Joel never misses an opportunity to camp and is always super excited to spend a weekend each fall camping with his favorite teens.

I enjoyed my weekend at home w/ Kitty--cleaning, grocery shopping, & laundrying. I'm thankful I really enjoy doing these things, because they sure do take up a lot of time.

After a cold, rainy weekend in Chicago and apart from each other, we spent Sunday night celebrating fall by making an apple pie together. It was excellent!


1 recipe pastry for a 9 inch double crust pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
3 T water
1 T vanilla extract
1/2 cup white sugar
1/2 cup packed brown sugar
Cinnamon for taste
8 Granny Smith apples - peeled, cored and sliced
  1. Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Add remaining ingredients including apples. Let simmer.
  2. Place the bottom crust in your pan. Fill with apple mixture. Cover with lattice crust.
  3. Bake 15 minutes at 425 degrees.. Reduce the temperature to 350 degrees F for 35 to 45 minutes, until apples are soft.
Joel had trouble not eating it! In fact, he ate 4/5 of the pie in just 2 days. So much for refusing sugar on marathon week.

I apologize for the poor picture quality, I did not want to blow out all my fall scents just for a picture. He can see better, has less headaches, & doesn't have to wear contacts :) Be sure to tell Joel he looks scholarly in them :)
